Cinnamon Stars

German: Zimtsterne

  1. Smile, delicious cookies are on their way!

  2. Preheat the oven, 300 F (250 F fan assisted)
  3. Line baking sheet with baking paper, keeping the plastic wrap to hand
  4. Whisk egg whites and salt to stiff peaks
  5. Continue to whisk the egg whites, slowly adding the sugar
  6. Set aside 1 TS of the mixture for every 10 cookies for the topping/icing

  7. Mix almonds, redcurrant yam, cinnamon and ground cloves
  8. Add mixture to egg whites, use gentle folding movements to mix to a dough
  9. Roll out the dough thinly (1/5 inches) between two sheets of plastic wrap (be careful, it's sticky)
  10. Cut out stars and place on baking sheet
  11. Spread the egg white mixture for the topping/icing equally over the stars (for a perfect finish use a small brush or a sharp knife)

  12. Place baking sheet on bottom shelf of the oven
  13. Bake for 15 mins (be careful not to let the egg white topping go brown!)
  14. Remove cookies on baking paper from baking sheet and allow to cool.
  15. Yummy, delicious (but tastes best after 4 weeks in the cookie tin)
